How long have I got to use it once I cut the top?

About 5 minutes. Curing will begin once Sanitary Silicone is exposed to the moisture in the air and, since it has a skin over time of approximately 5 minutes (at 25°C and 50% relative humidity), this is about how long you have before issues arise. Please do note, this time will be reduced if working in higher humidity and/or higher temperatures. It will be extended if working in colder / lower humidity areas.

What’s the best way to remove bits that I applied by mistake?

If you get to them before the silicone has cured (not just skinned over but actually cured), you’ll be able to remove them with mineral turpentine (though care should be taken not to damage the underlying surface if it is a little sensitive). If the silicone has cured, our Weicon Gasket Remover is a good option. We’ve used it more than once to remove old silicone and it’s generally performed quite well.
